My 3 Super Easy, Super Yummy Go-To Meals from Trader Joe's!




Now, that my daughter is a freshman in college and I am an empty nester, meal planning looks different. However, I work remotely and if not careful, when I am really busy, I can easily go without eating until late into the afternoon and then I am starving, and my choices are less than healthy!


I found 3 super simple meals from Trader Joes that don't take much time to make, and I usually have leftovers for the next day's lunch or dinner. If you find yourself in a pinch, try one of these quick and yummy meals!


Miso Ginger Soup with Dumplings

This is one of my favorite lunches and sometimes dinners! It is super flavorful and quick!


Ingredients:

  • 1 box Miso Ginger Broth

  • Choice of dumplings (Chicken Cilantro Mini Wontons, Chicken Soup Dumplings, Steamed Pork and Ginger Dumplings, or Vegetable Dumplings)

  • Optional add-ins: chopped green onions, mushrooms, or any preferred vegetable

Preparation:

  1. Pour the broth into a pot.

  2. Add any chosen vegetables.

  3. If using Cilantro Mini Wontons, add them directly to the broth and bring to a boil.

  4. For other dumplings, follow package instructions (usually microwaving) before adding to the soup.


Beef Birria Tacos and Salad


If you are looking for a super flavorful meal that is simple to make, this is it! I bought this on a whim, and had no idea what to expect, but wow! It's a flavorful and savory meal that hits the spot!


Ingredients:

  • Package of Beef Birria (Trader Joe's)

  • Tortillas

  • Diced onion and fresh cilantro for topping

  • Salad ingredients: fresh greens, diced cucumbers, cherry tomatoes, dried cranberries


Preparation:

  1. Refrigerate the Beef Birria package overnight.

  2. Simmer the contents in a pot for 15-20 minutes.

  3. Shred the meat while warming the tortillas.

  4. Assemble your salad.

  5. Fill warm tortillas with the meat, topped with diced onion and cilantro.


Shawarma Chicken with Jasmine Rice and Green Beans


This chicken is delish! The best part is that it is already seasoned! This is great for dinner, especially when you need a quick fix!


Ingredients:

  • Trader Joe's Shawarma Chicken

  • Jasmine rice (microwave pouch)

  • Green beans

  • Olive oil and seasoning for green beans


Preparation:

  1. Bake the pre-seasoned chicken at 400°F (200°C) for about 20 minutes.

  2. Microwave the jasmine rice pouch for 2 minutes.

  3. Sauté green beans in olive oil with preferred seasoning.


These quick and tasty meals have become my go-to solutions for maintaining a healthy eating routine while managing a busy remote work schedule. Give them a try when you're in a time crunch!
